Chinese General Tso's Chicken with Vegetables
Crispy General Tso's Chicken Stir-Fry with Mixed Vegetables in a Sweet-Spicy Sauce
Ingredients:
For the Chicken:
1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
1/2 cup cornstarch
1/2 cup all-purpose flour
1/2 teaspoon salt
Vegetable oil, for frying
For the Sauce:
1/4 cup soy sauce
3 tablespoons rice vinegar
3 tablespoons hoisin sauce
2 tablespoons sugar
1 tablespoon sesame oil
1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
1/2 cup chicken broth
1 tablespoon minced fresh ginger
2 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes (adjust to taste)
For the Vegetables:
1 red bell pepper, chopped
1 cup broccoli florets
1 carrot, thinly sliced
2 scallions, chopped (for garnish)
Sesame seeds, for garnish
Directions:
In a mixing bowl, combine cornstarch, flour, and salt. Dredge chicken pieces in the mixture until well coated.
Heat vegetable oil in a deep skillet or wok over medium-high heat. Fry the chicken in batches until golden and crispy (4–5 minutes). Drain on paper towels and set aside.
In a bowl, whisk together soy sauce, rice vinegar, hoisin sauce, sugar, sesame oil, chicken broth, and the cornstarch slurry. Set aside.
In a large clean skillet or wok, heat a bit of oil over medium-high heat. Add ginger and garlic; sauté for 30 seconds until fragrant.
Add broccoli, carrots, and bell peppers. Stir-fry for 3–4 minutes until just tender but still crisp.
Pour the sauce into the pan, bring to a simmer, and stir until thickened (1–2 minutes).
Add fried chicken pieces to the skillet and toss to coat in the sauce. Cook for 1 more minute to heat through.
Garnish with scallions and sesame seeds. Serve hot with steamed rice or noodles.
