Lemon and Garlic Shrimp Pasta
Zesty Lemon-Garlic Shrimp Pasta with Fresh Parsley and Olive Oil
Ingredients:
300g (10 oz) spaghetti or linguine
400g (14 oz) raw shrimp, peeled and deveined
3 tbsp olive oil
4 garlic cloves, thinly sliced
Zest and juice of 1 large lemon
1/4 tsp red chili flakes (optional)
Salt and freshly ground black pepper, to taste
1/4 cup fresh parsley, chopped
1/4 cup grated Parmesan (optional)
Extra lemon wedges, for serving
Directions:
Cook pasta in salted boiling water according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and chili flakes and sautĂ© for 1–2 minutes until fragrant (do not brown).
Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side or until pink and cooked through.
Stir in lemon zest and juice, and toss to coat shrimp.
Add cooked pasta to the skillet and gently toss everything together, adding a bit of reserved pasta water to loosen the sauce if needed.
Finish with chopped parsley and Parmesan, if using. Serve hot with lemon wedges.
