Chicken and Broccoli Pasta
Creamy Chicken and Broccoli Pasta with Garlic Parmesan Sauce
Ingredients:
12 oz pasta (penne, fettuccine, or your choice)
2 tablespoons olive oil
2 boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper, to taste
3 cups broccoli florets
3 garlic cloves, minced
1/2 teaspoon red pepper flakes (optional)
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup reserved pasta water
2 tablespoons fresh parsley, chopped (optional)
Directions:
Cook pasta in a large pot of salted boiling water according to package directions. In the last 2–3 minutes of cooking, add broccoli florets. Reserve 1/2 cup of pasta water, then drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper and sauté until golden and cooked through, about 5–7 minutes. Remove and set aside.
In the same skillet, add garlic and red pepper flakes (if using). Sauté for 30 seconds until fragrant.
Add heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.
Return chicken and broccoli pasta to the skillet. Toss everything together, adding reserved pasta water a little at a time until sauce reaches desired consistency.
Taste and adjust seasoning. Garnish with parsley if desired. Serve warm.
