Chinese Meat Pies
Crispy Chinese Pan-Fried Meat Pies (Xian Bing)
Ingredients:
For the Dough:
3 cups all-purpose flour
3/4 cup warm water
1/4 teaspoon salt
For the Filling:
1 lb ground beef
2 green onions, finely chopped
1 tablespoon ginger, minced
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon sesame oil
1/2 teaspoon white pepper
1 teaspoon sugar
For Cooking:
2–3 tablespoons vegetable oil (for frying)
Directions:
In a large bowl, mix the flour and salt. Gradually add warm water while stirring until a dough forms. Knead for 8–10 minutes until smooth. Cover and let rest for 30 minutes.
In another bowl, combine all filling ingredients and mix thoroughly until sticky. Set aside.
Divide the dough into 12 equal pieces. Roll each piece into a small circle (about 4–5 inches wide).
Spoon 2 tablespoons of meat filling into the center of each circle. Bring the edges together and pinch to seal, forming a round meat-filled pouch. Flatten slightly.
Heat oil in a skillet over medium heat. Add meat pies seam side down, cooking in batches. Fry until golden brown, 3–4 minutes per side, and the meat is cooked through.
Drain on paper towels and serve hot with soy-vinegar dipping sauce or chili oil.
